* 4 eggs or egg substitute
2 - 3 1/2 oz pkg. sliced pepperoni
1/4 c. margarine
1 c. Parmesan cheese, grated
1/4 c. cream
1/4 c. parsley & pepper to taste
1 lb. fettucini

Directions:
Directions:
Let eggs, margarine, and cream stand at room temperature for 2-3 hours. Beat together eggs and cream iUSt Until blended. Add pasta to a large amount of boiling, salted Cook 10-12 minutes or until tender, but firm. Drain well. Heat an ovenproof serving dish in a 250º oven. Toss pasta with butter and pepperoni in a heated serving dish. Pour egg mixture over and toss Until pasta is coated. Add cheese and parsley; toss to mix. Serve immediately.
*eggs can be heated on low in a double boiler. Before adding to cream let cool.
