1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup heaping crunchy peanut butter (I prefer Skippy's)
1/2 cup sugar
1/2 cup packed light brown sugar
1 extra-large egg
1/2 teaspoon vanilla

Preheat oven to 375º F. Line baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking soda, and salt to combine. In a standing mixer fitted with the mixing paddle, beat softened butter for 2 minutes. Add peanut butter, both white and brown sugars and beat on medium speed until fluffy, about 3 minutes. Be sure to scrape down sides of bowl. Add egg and vanilla and beat until well combined. Gradually add flour mixture to the wet ingredients until combined, again, scraping sides of the bowl periodically. Using a 1 tablespoon cookie scoop, scoop dough and roll into 1-inch balls. If desired, you may roll them in white sugar at this time. Place them 2 inches apart on the baking sheets. Using the tines of a fork gently press a crisscross pattern on each cookie.

Bake in oven at 375º for ten minutes. Be sure to rotate baking sheets in the oven halfway through baking time. Remove from oven and let them rest on baking sheets for two minutes before removing them to a baking rack to cool. Store in airtight containers.
