Smoked Salmon Pasta Recipe

2 pkgs. Smoked Salmon, firm with lots of smokey flavor, not mild
1 lb Angel Hair Pasta Noodles
1 pt Heavy Cream
4 oz. Feta Cheese dry
1 tbsp Olive Oil
¼ cup Fresh Cilantro


Directions:
Directions:
Cook pasta till tender.
While pasta is cooking, remove the skin and crumb salmon into ½” pieces.
Warm heavy cream stirring regularly to prevent burning.
Remove the stems and dice cilantro, rinse.

Drain the pasta, add salt to taste, add olive oil and toss.
Pour warmed cream over pasta, toss and mix evenly.
Add salmon and toss evenly.
Pour onto serving platter.
Sprinkle with crumbed Feta cheese, toss lightly to mix.
Sprinkle with cilantro for color.

Serve warm

My wife created this recipe, while enjoying smoked salmon made by a friend of mine.
Here in the North West, salmon and smoked salmon are a regular way of life, living next to the Salmon spawning grounds. I have since taught myself how to smoke salmon.
It is hard to keep it lit.
