4 LG egg yolks 3 1/2 tbsp lemon juice 1 tbsp water 4 ice cubes 1 cup (2sticks) butter 1/4 salt 1/8 tsp cayenne pepper

Directions:
Directions:
On top of a double boiler or in a stainless steel bowl place egg yolks lemon juice and water. Fill the bottom pan with water and let come to simmer not a boil. Whisk the eggs until thick over simmering water. turn off burner add ice cubes to hot water. Put mixture back over water whisking constantly. If the mixture looks like it will curdle remove from bottom pan and stir in 1 tbsp cold water. Keep whisking to desired thickness.
