2 tbsp veg oil, 9 bulb soring onions or 4 sweet onions thinly sliced, Grated rind and juice of 2 lemons, Salt/pepper 2/3 cup sugar 1 cup white wine vinegar 1 Baguette thinly sliced 1 round log 6 oz. goat cheese at room temp.

IN med skillet heat oil onions and a good amount of salt. Cook until onions soft. Add lemon rind and juice, sugar, and vinegar stirring often. Low heat cook for 45 minutes or until liquid is gone. Meanwhile, toast bread and spread with goat cheese. Add salt and pepper to taste and let stand 20 minutes off heat. Spoon to toast and sprinle pepper on top.
