1 3/4 lb. tomatoes, cored...
1 ¼ t table salt, divided...
½ red onion, sliced thin...
2 T red wine vinega...
1 t dried oregano, plus extra for seasoning...
½ t pepper...
1 English cucumber, quartered lengthwise and cut into ¼- inch chunks...
1 green bell pepper, stemmed, seeded, and cut into 2 by ½ inch strips...
1 cup pitted kalamata olives...
2 T capers, rinsed...
5 T extra virgin olive oil, divided....
8 oz. block of feta cheese, sliced into ½-inch- thick triangles...

Directions:
Directions:
Cut tomatoes into ½-inch-thick wedges, cut wedges in half crosswise...
Toss tomatoes and ½ t salt together in a colander set in a large bowl, let drain for 30 minutes...
Place onion in a small bowl, cover with ice water and let stand for 15 minutes...
Whisk vinegar,oregano, pepper, and remaining ¾ t of salt together in a second smalll bowl...
Discard the juice from the tomatoes, now transfer the tomatoes to the now empty large bowl...
Drain onion and add it to the tomatoes...
Add vinegar mixture, cucumber, bell pepper, olives, and capers and toss to combine all the veggies...
Drizzle a ¼ cup olive oil over veggies, toss gently, season veggies with salt and pepper to taste...
Transfer veggies to a serving platter and top with the triangles of feta cheese, too each slice with a small drizzle of olive oil and oregano to your taste....

Excellent salad, serve with a crusty bread, good glass of red wine, chilled just a bit.
Finish with some fresh fruit, your choice.....I like watermelon, figs, dates, strawberries and sliced apples, pears or peaches....
