Directions:1. Warm oven to 250º.
2. Prepare required amount of fries. Fry at 350º until light golden brown then place in warm oven until fish is ready.
3. Clean fish with with lemon and warm water, season with salt and pepper and chill while preparing batter.
4. Put flour in bowl with baking powder, salt and sugar, make a well in the center, add oil and 2/3 of a beer, stir with wooden spoon until mixed then add beer to desire batter thickness. Let the batter stand covered in a warm place for 30 minutes.
5. Whip egg white until it forms peaks then fold in batter.
6. Dry fish with paper towel, cut in smaller portion if needed.
7. Put ¼ cup flour seasoned with salt & pepper in a plate.
8. Coat fish with the seasoned flour and place 2 or 3 pieces of fish in batter.
9. By using 2 forks remove the pieces of fish from batter and let excess batter drip off. Depending of the size of fish and fryer do about 2 or 3 pieces at the time.
10. Carefully place fish in hot oil and for few seconds so that it doesn't stick to side or basket. Cook for 3 minutes then turn over for another 3 minutes or until golden brown or crisp then remove from oil and place in warm oven with fries. Keep in oven until all pieces are done.
11. Then place 2 or 3 pieces of fish and desire amount of fries for one person in fryer for another 3 minutes or desired crispness then serve. Repeat until all done.
