Ingredients: 10 large eggs... 1/2 cup half-n-half... 11/4 t table salt, divided... 1/4 t Pepper... 4 T unsalted butter, divided... 1 pound of cherry tomatoes, halved... 3 T thinly sliced shallots, divided... 2 T chopped fresh basil, divided... 1 t seasoned rice vinegar... 2 zucchini, shredded... 3 oz. goat cheese, crumbled, 3/4 cup..,

Directions:Adjust oven rack to upper middle position, heat oven to 375º... Whisk eggs, half-n-half, 1 t salt and all of pepper together in bowl, set aside... Melt 1 T of butter in a 12 inch oven safe skillet over medium-high heat... Add tomatoes, 1 T shallots and remaining1/4 t of salt, cook until tomatoes release heir juice and just begin to break down, about 5 minutes.... Transfer tomatoes to bowl an stir in 1 T basil and vinegar, set aside... Add zucchini, remaining 3 T butter and remaining shallots to now empty skillet.... Cook over medium heat until zucchini has softened, about 7 minutes.... Stir in egg mixture and sprinkle in goat cheese and remaining 1 T basil.. Transfer skillet to oven and bake until frittata is set in the center, about 13 minutes... Let sit 5 minutes, slide frittata onto platter, cut into wedges, serve with tomato sauce.... Enjoy! |
