Excellent side for a camping BBQ!


Ingredients:

24-30ct Pre-cooked Shrimp, med-large in size (tails off)
1lb Scallops

Corn, 4 ears, cut in half


Baby Potatoes, 1lb bag


2x Yellow onion, sliced lengthwise


10-12 Fresh white mushrroms, sliced


1x Red pepper, sliced thin, lenghwise


1x Green pepper, slice dthin, lengthwise


Sea Salt


Cracked black pepper


1/4 stick of garlic butter






12"x24" Aluminum Foil Tray

Directions:
Directions:
1. Lightly grease the foil tray with olive oil (use a double tray if BBQ'ing)
2. Place all veggies in the bottom layer
3. Place the shrimp and scallops on top
4. Apply salt and pepper to top, 1/2 tsp of each
5. Slice the garlic butter into 1/4" thick blocks and place randomly on top
6. Cover with tinfoil
7. Bake in oven or atop BBQ for 1.5hrs @ 350F

Makes an amazing side dish with steak, but can also be a hearty 1-pan meal for a crew of people when served with fresh, warm, crusty bread.

This is great recipe that guests and kids always love. So simple, so tasty and very hearty. Smells amazing when cooking and has been a hit at nearly every winter event that I have prepared it. Simple, messy but oh so yummy. Always a cabin treat for visitors during the cold Labrador Winter!
