2 T vegetable oil...
4 carrots, peeled and sliced1/2 inch thick...
1 onions, halved and sliced thin...
2 stalks of celery ribs, sliced 1/2 inch thick...
1 1/2 T Old Bay seasoning...
5 cups of water...
8 oz. red potatoes, unpeeled, cut into 3/4 inch pieces...
6 oz. mild linguluica sausage, sliced on the bias 1/2 inch thick...
1/2 t pepper...
1/4 t table salt...
1 pound extra-large shrimp (20 to 25 per pound) peeled, deveined and tails removed...
3/4 cup fresh or thawed frozen corn...

Heat oil in a Dutch oven over medium-high heat until it shimmer, add carrots, onion and
celery, cook until onion softens, 5 to 7 minutes...
Stir in Old By seasoning, cook until fragrant, 25 seconds, stir in water, potatoes, sausage, salt and pepper, bring to a boil, reduce heat to medium, cover, simmer until potatoes are tender, about 12 minutes...
Stir in shrimp and corn, cook until shrimp are just done, 4 to 5 minutes at most!...
Serve and enjoy!
