2-6 lb. loin roasts
1 T. plus 1 tsp. black peppercorns
2 T. plus 1 tsp. fresh rosemary or 2 tsp. dried rosemary
6-8 garlic cloves, pressed
¼ c. extra virgin olive oil
2 T. coarse salt
2 tsp. thyme
¼ c. fresh lemon juice

Directions:
Directions:
Combine salt, peppercorns, rosemary and thyme in food processor until peppercorns are coarsely ground. Combine in a small bowl with garlic, lemon juice and olive oil. Score top of loins in a diagonal pattern. Rub on seasoning. Let sit at room temperature 3-4 hours. Roast at 425° for 15 minutes, then reduce oven to 325º and bake for 1½ hours or until meat thermometer registers 160°. Let stand 10 minutes before slicing.
