1 pound strawberries, sliced (4 cups)
1 1/4 cups granulated sugar
3 tbsp lemon juice

Directions:
Directions:
Add strawberries to a pot on medium heat and cook, stirring occasionally, until they start breaking down, about 10 minutes. Add in the sugar and lemon juice and stir. Cook, stirring frequently, for another 15 minutes until it reaches a temperature of 220º. Turn off the heat and let cool before refrigerating in a covered container.

Yum . . . very good but very sweet. Sugar is the thickening and preservative, however I play around with trying to add less sugar.
