1 ¾ cup heavy cream (divided)
¼ cup sugar
1/8 tsp salt
1 vanilla bean split in half lengthwise. Or, 1 Tbs vanilla extract
1 ¼ cup whole milk

Directions:

Pour 1 cup heavy cream into saucepan and add the sugar & salt.
If using vanilla bean – scrape the inside of vanilla bean into the pot, then add the vanilla pod also.

Warm the mixture over medium heat, just until sugar is dissolved.

Remove from heat and add the remaining cream, whole milk and vanilla extract (if using). Stir to combine and chill in refrigerator.

When ready to churn, remove the vanilla pod, if applicable. Whisk mixture again (if will settle a bit and need to be redistributed). Churn according to maker directions. Transfer to airtight container and freeze.

This really is good ice cream. I have the mini ice cream maker and I get two batches from this recipe. Each batch for the mini is just about 2 servings.
