1 cup butter, softened
1 8-ounce package of cream cheese, softened
1 cup white sugar
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup finely chopped pecans
red and green sugar crystals
Several Christmas themed Sprinkles (Jimmies, nonpareils, wreath sprinkles, Winter themed)
48 pecan halves (approx.) (May have to cut in half if too long)

1. In a large bowl, cream butter and cream cheese. Add sugar and vanilla. With electric mixer at medium speed, beat until light and fluffy. Be sure to scrape down sides of bowl. In medium sized bowl, combine flour and salt and whisk to distribute the salt evenly; gradually add to cream cheese mixture, beating until well blended again, scraping sides of the bowl periodically. Stir in chopped pecans. Cover bowl with plastic wrap and refrigerate for 15 minutes.

2. On four sheets of aluminum foil, shape dough into four 6-inch rolls, 1 1/2 inches diameter. Wrap each roll tightly in foil and refrigerate overnight.

3. Preheat oven to 325º F. Line cookie sheets with parchment paper.

4. Remove rolls of dough from refrigerator one at a time. Slice dough in 1/4-inch slices and coat the edges by rolling the edge in the various Christmas Sprinkles. Place on prepared cookie sheets about 1 and half inches apart and top each cookie with a pecan half by gently pressing it into the top.

5. Bake for 15 - 18 minutes, being sure to rotate baking sheets in the oven halfway through baking time, until bottom of cookie is lightly browned when lifted. Remove cookies to wire racks to cool completely. Store in airtight containers.

These are so nice at Christmas time; they look as pretty as they taste. For coating the edges of the cookies before baking, I would have four or five little plates in front of me with different sprinkles on each for a nice assortment of decorated cookies.
