4-6 beets (depending on number of guest,1-1), making sure the leafy part is perky, not saggy, and beet is firm
3 tbsp olive oil
kosher salt to taste

Scrub the dirt off of the beets, cut tops and bottoms off, then peel the outside skin with a vegetable peeler. (**Note: beets will stain your hands and clothes so wear GLOVES AND APRON).

CHECK OUT THE CROCK POT IDEA BELOW:

Preheat oven to 400º.

Wrap each "baseball" beet in foil and place on baking pan.

Roast anywhere from 45 to 90 minutes, until tender.

Drizzle olive oil over beets and then toss (not throw) to combine.

Enjoy HOT.

I had roasted and sliced "baseball" beets at a cocktail party and I was amazed by the wonderful taste.

You can slice the "baseball" beets and serve as a side vegetable or serve whole as a vegetarian main course. Either way they taste delicious.

I even heard one person propose using a crock pot instead of the oven after scrubbing them, on low for 6 hours. That is genius!
