1 medium zucchini
¼ cup chopped onion
1 small garlic clove minced
2 tablespoons butter
1 small tomato peeled and chopped
¼ cup soft bread crumbs
1 tablespoon parmesan cheese
salt and pepper to taste

Directions:
Directions:
Preheat oven to 350º
Blanch and chop tomato
Wash zucchini and cut in half lengthwise
Hollow out Zucchini shell and put pulp in bowl
Combine with tomato and salt and pepper
Melt one tablespoon of butter in an sauté pan med to high heat
Add garlic and onion and sauté until soft
Add zucchini pulp and tomato to garlic and onion mixture and heat through
Evenly fill boats with mixture rounding the top
Melt remaining tablespoon of butter in microwave
Mix with bread crumbs and parmesan cheese
Sprinkle breadcrumb mixture on top of boats
Place in shallow baking dish
Cover with foil and bake for 25 minutes
