2 lb Carrots, peeled
1/2 cup Mayonnaise
1 tablespoon Minced Onion
1 tablespoon prepared Horseradish
Salt and pepper to taste
1/4 cup finely crushed Buttery Crackers
2 tablespoon Butter
Chopped Parsley

Directions:
Directions:
1. Cut carrots in strips and cook in boiling salted water until fork tender. Reserve 1/4 cup of the cooking liquid.

2. Arrange carrots in shallow baking dish and set aside.

3. Preheat oven to 375 degrees.

Combine reserved liquid, mayonnaise, onion, horseradish, salt and pepper and pour over carrots. Sprinkle cracker crumb on top and dot with butter. Sprinkle with parsley. Bake for 20 minutes or until heated through and top starts to brown.
