2 c quinoa flour
1 tsp baking soda
½ tsp salt
⅔ c coconut oil, melted and cooled
½ c brown sugar
½ c splenda
2 eggs
2 tsp pure vanilla extract
1 c chocolate chips
Course salt, for sprinkling

Preheat oven to 350º F

Line baking sheet with parchment paper
Spread quinoa flour over parchment paper and bake for 9 - 10 minutes (gets rid of any bitterness)
Transfer to a bowl to cool (~5 minutes)

In a separate bowl, combine coconut oil and brown sugar until smooth
Add vanilla and eggs and beat until smooth and creamy
Add dry ingredients and mix until dough forms
Fold in chocolate chips
Use a cookie scoop to portion cookie dough onto a parchment paper lined baking sheet
Bake 8 to 10 minutes, or until edges just start to turn golden brown
Leave on cookie sheet for 5 minutes before transferring to wire rack to finish cooking
