Directions: In a large bowl, mix together the warm water, sugar and stir to dissolve the sugar. Sprinkle the yeast over the water and give it a little stir. Let this stand for 10 minutes. Next you’ll add in the milk, eggs and salt, stir this around to mix. Set this bowl aside. In a separate bowl add in the flour and the remainder of the sugar. Add in the shortening and use your fingers to crumble it up into the flour. Keep working on it until the shortening barely noticeable. Now you’ll want to add the flour to the wet ingredients in 3 parts, using a wooden spoon stir SLOWLY to start. Once you have a ball of dough stop working it, cover with a hot wet towel that has been wrung out. Set in a warm place to rise, I like to put it in the oven with only the light on. Let it rise until it’s doubled in size, this should take about 45 minutes to 1 hour. Uncover the bowl and press down the dough, make a ‘well’ in the center, add in the melted butter. Using your hands to work the butter into the dough about 3 to 5 minutes Remove the dough from the bowl and knead on an un-floured work surface for about 5 minutes more. Let the dough rest for about 5 minutes. Roll out the dough on a lightly floured surface. You’ll want the dough to be about ¾ to 1 inch thick. I cut out my dough into 2 inch squares, but you can go smaller if you want smaller rolls. I ended up with 18. Roll the dough into balls. Grease the pans you’re going to use. I’d recommend using a 2-9 inch round pans or 2-9 by 9 inch or 1-9 by 18 inch pan. Spaced about 1 inch apart. Cover with the same damp towel for about 45 minutes, I used the oven with the light on again. You can also, cover the rolls with plastic wrap and place in the fridge overnight. In the morning take them out and let them sit for about 30 minutes before baking. Preheat the oven to 400 degrees F or 200 degrees C. Bake the rolls for 12 to 14 minutes, until golden brown. Melt 2 tablespoons of butter in a small bowl, add in the 1 teaspoon of honey and stir until it’s dissolved, the honey is optional. Brush while still a little warm.
