6 c. shredded lettuce
1 c. thin sliced celery
1 (8oz.) can sliced water chestnuts
½ c. thin sliced green onions
1 cucumber thin sliced
4 c. (or more) cooked chicken
2 pkg. frozen pea pods, thawed
2 c. mayonnaise
2 tbsp. sugar
½ tsp. curry powder
½ c. cashew nuts
¼ tsp. ground ginger

Directions:
Directions:
In shallow dish-layer lettuce, celery, chestnuts, onion, cucumber, and chicken. Pat pea pods dry and arrange on top. Mix together mayonnaise, curry powder, sugar, and ginger. Spread over pea pods. Cover and refrigerate up to 24 hours. Garnish with cashews and serve.
