¼ c. butter
1 tsp. minced garlic
½ tsp. pepper
1--3 lb. beef tenderloins trimmed and tied
2 Tb. butter
4 oz. blue cheese, crumbled
1 c. beef broth
¼ c. Madera wine
2 c. sliced fresh mushrooms
½ c. chopped pecans
½ c. pine nuts or sliced almonds
⅓ c. sliced green onions

Melt 1/4 c. butter in skillet until sizzling. Stir in garlic and pepper. Place beef in skillet and brown on all sides (5-7 minutes). Remove and place in a foil lined 9 x 13 pan. Bake 400 degrees for 35-50 minutes or until meat thermometer registers 140 for rare or 160 for med.

Melt 2 Tb. butter in pan with pan drippings, stir to deglaze. Stir in blue cheese cook until melted,, add broth and wine. Add mushrooms cook until tender. Stir in nuts and pine nuts and onions. Serve with carved beef.
