Chorizo

Torcino (bacon)

One pound of dry beans

Onions

Garlic

Green Pepper

Bay Leaf

Cumin

Olive Oil (Goya Pure)

Tomato Sauce

Vinegar

(Potatoes can be added)

Directions:
Soften the beans in water, salt, bay leaf, torcino and chorizo (overnight).When softened place the black beans, water and bay leave in a large soup pot. Bring the mixture to a simmer. Reduce the heat to low, partially cover the pot, and simmer the beans until tender, 1 and a half hours.
While the beans are cooking, heat the olive oil in a large skillet. Add the minced green pepper, onion, and garlic, tomato sauce and vinegar (sofrito). Cook over medium heat until the vegetables have softened.Add the sofrito to beans, cumin, salt, and pepper . Mix well.Once beans are tender, remove the bay leaves. (Do not drain the beans.) Black or red beans can be prepared the same way.
