Ingredients: 1 tbsp. Olive oil 1 lb. shrimp peeled and deveined with tails off salt and pepper to taste 2 tbsp. unsalted butter 6 cloves garlic minced 1/2 cup dry white wine Chardonnay or Pinot Giriot 1/2 cup reduced fat (light) cream 1/2 cup grated fresh Parmesan cheese 2 tbsp. fresh chopped parsley

Directions:Heat oil in large skillet on med-high heat season shrimp with salt and pepper then fry in oil for 1 to 2 minutes on each side. Transfer shrimp to a bowl.
Melt butter in same skillet. Saute garlic until fragrant 30 seconds Pour in wine may substitute chicken broth and allow to reduce to 1/2 volume scraping any bits off bottom of pan as to not burn and to add flavor.
Reduce heat to low-med heat. Add cream and bring to a gentle simmer stirring occasionally season with salt and pepper to taste. Add Parmesan and allow sauce to thicken. Simmer until cheese is melted and sauce thickens then add shrimp sprinkle with parsley. Taste and adjust salt and pepper to taste if needed.
Serve over pasta, rice, or/and steamed vegetables.
*Can substitute Half & Half being careful not to bring sauce to a boil so it will not curdle. You can also use evap. milk as a low calorie substitution.
*Heavy cream may also be substituted and will not require cornstarch for thickening. |
