5-7 lb. prime rib beef roast (3-4 ribs)
6 cloves garlic, cut into slivers
Rosemary sprigs

Rub:
2 Tb. each black peppercorns, fresh rosemary or thyme,coarse kosher or sea salt, and sweet paprika. Grind all together in coffee bean grinder.

Set the grill up for indirect cooking. The meat should not be directly over the fire. Using the tip of a knife, make a series of ½ inch deep holes in the roast mostly in the sheath of fat on the top. Insert garlic slivers in the holes. Strip off some leaves from rosemary 1 in. long and insert the sprigs in a few of the holes.

Make the rub by grinding the four ingredients in a spice mill or by hand. I use a coffee grinder. Rub the mixture all over the roast.

Oil or spray non-stick spray on the grill grate before placing the meat on it fat side up. Grill the roast about 15 minutes per pound, rotating the roast 180 degrees every 30 minutes (keeping the fat side always up) to get even smoke and heat to all sides. Once the temp of the meat reaches 145 degrees for med. rare or 160 degrees for medium, transfer to a platter or carving board, cover with aluminum foil and set sit for 10-15 minutes before slicing.

(Bill's Notes: I grill 15 minutes per pound, then shut all vents and let it sit in the heat and smoke while the fire begins to cool for another 15-20 minutes. Then I bring it in and let it rest for 10 minutes before slicing) Since Nancy is allergic to rosemary, I go light on it and sometimes substitute thyme.

Bill made this for a fundraiser dinner for HJWC for Valentine's Day. The weather was bad, 21 degrees outside, couldn't keep the fire going, finally moved it to the electric grill, fat dripped and caught on fire; it was bedlam! He ended up putting it in the warming drawer. Finally when he thought it was barely ready, he brought it in. Everyone loved it and had no idea how much trouble he was having. Of course the rest of the hosts plied the guests with drinks and appetizers! It was a successful Sign Up Party, and all the guests loved it.
