2 cups flour
2 tsp curry powder
1/4 tsp turmeric
1/4 tsp salt
1/4 butter
1/4 cup shortening
1/3 cup water

Combine flour, curry powder, turmeric and salt in a large bowl.
Cut in the butter and shortening until you have small crumbs.
Add water and mix to pull the dough together.
Wrap the dough in plastic and allow to rest for 1 hour.
 

Filling

2 tbsp olive oil
1 lb ground beef
1 small onion, diced
2 tsp garlic, minced
2 tsp ginger, minced
1 tsp dried thyme
1 tsp salt
1 tsp black pepper
1 tbsp flour
1/2 cup beef stock

1 egg, beaten

Heat a large fry pan to medium high heat. Add the beef and begin to saute.
Add the onions, garlic and ginger and saute until the beef is cooked and crumbled.
Add the thyme, salt and pepper.
Add the flour and mix in. Then add the stock and cook it down so the meat is just pasty, not dry and not wet. The idea here is to give the meat a nice moist consistency.
Remove the filling from the heat and let cool.

Preheat oven to 400 F
Divide the rested dough into 8 balls.
Flatten a ball and roll it out to a 4-6 inch oval.
Place 1/8th of the filling on the center of the oval and spread the meat out a bit, leaving a border around the outside.
Brush the outside of the pastry with the beaten egg mixture.
Fold the dough over, enclosing the meat and creating a nice seal around the outside.Press the edges with a fork to strengthen the seal.
Repeat the process to form 8 patties.
Place the patties on a baking sheet and brush them with the beaten egg.
Place them in the preheated oven and bake for 20-30 minutes, or until the dough is nicely browned.
