Ingredients: 1 lb Ground Turkey (or Beef) 2 tbsp chili seasoning 2 tbsp smoked paprika 2 tbsp garlic powder 1/2 tbsp salt 2 tbsp onion powder 1 can black beans (rinsed) 1 can rotel 1 cup dry organic quinoa (rinsed) 1 tbsp olive oil wheat tortillas (burrito size) greek yogurt (for dipping)

Directions:1. Add olive oil to medium/high heat pan. Add and brown turkey with half of all the spices. 2. Add black beans, Rotel and quinoa. Stir well. 3. Fill Rotel can with warm water and pour into pan. 4. Add remaining seasoning, stir and bring to a boil. 5. Cover and let simmer for 25 minutes. 6. Fill burrito tacos with filling and serve with Greek yogurt for dipping. |
