1 lb. boneless, skinless breasts (cut in 2 in. strips)

Rub:
1 tsp onion powder
1 tsp garlic powder
˝ tsp salt
Pepper

3 Tb. evoo
1 medium onion, chopped
1 clove garlic, chopped
1 ˝ C. chicken bone broth
1 ˝ Tb. tomato paste
8 sun-dried tomatoes, chopped (can omit)
1 12-oz. jar artichoke hearts, drained
12 pitted Greek olives (green), cut in halves
1 tsp. lemon juice
Fresh parsley, chopped
Fresh basil, chopped
1 lemon, cut in slices

Directions:

Combine rub ingredients on flat plate. Coat chicken with mixture.

Heat 1 Tb of oil in large skillet. Brown chicken on each side (about 3 min. per side). Remove chicken.

Add rest of oil to pan. Sauté onion and garlic. Add remaining ingredients (except lemon slices and some parsley). Stir well to combine. Simmer about 7 min. Add lemon slices and cook 2 more min.

Return chicken to pan. Cook until done, about 3 more min.

Sprinkle with fresh parsley. Serve.
