Meatballs:
1 lb ground beef
2 Tb cooked quinoa
1 tsp. onion powder
½ tsp. garlic powder
½ tsp. salt
Ground black pepper
2 Tb. evoo

1 4-5 lb. spaghetti squash
Tomato sauce of choice

Directions:
Directions:
Combine all meatball ingredients except oil. Form into about 12 balls.

In medium skillet, heat oil on medium. Cook meatballs 8-10 min. until browned on all sides.

Preheat oven to 350º.

In a sauce pot, simmer tomato sauce. Add meatballs and simmer for at least 1 hour.

Cut squash in half. Put in deep dish with cut sides down. Add 2 C. hot water. Put in oven. Bake 40-50 min., until knife goes through skin easily. Remove and allow to sit for about 5 min.

With fork, make strands of squash. Top with sauce and meatballs.
