Ingredients:

1 lb ( 24 shrimp) peeled and deveined
1 ½ cups shredded red cabbage
½ c Shredded carrot ( 2 carrots)
1 med Jalapeno , seeded and minced
2 T apple cider vinegar
1 T honey
½ c sour cream
2 t lime zest
2 t fresh lime juice
1 T olive oil
1 T Chipotle paste – (canned crushed Chipotle)
1 t fresh lime juice
8 Corn tortillas
1 chopped tomato
½ c chopped fresh cilantro
6 limes
Salt & Pepper

Slaw: 1 ½ cups shredded red cabbage
½ c Shredded carrot ( 2 carrots)

Sea salt/ pepper to taste

Lime Crema:
½ c sour cream
2 t lime zest
2 t fresh lime juice

Shrimp
1 lb ( 24 shrimp) peeled and deveined
1 T olive oil
1 T Chipotle paste – (canned crushed Chipotle)
1 t fresh lime juice
1/2 t sea salt



For serving:
8 Corn tortillas
1 chopped tomato
½ c chopped fresh cilantro
1 lime
Slaw: In a large mixing bowl toss cabbage, carrots, jalapeno, vinegar, and honey. Salt & Pepper to taste. Cover Set aside in frig. (Can make 1 day ahead)
Lime Crème: Mix ½ c sour cream with lime zest and juice. Cover set in refrigerator. (can make 1 day ahead)
Shrimp: Toss shrimp, oil chipotle lime juice salt & pepper. ( can make 1 day ahead) Heat grill and grill on each side for 1 minute until shrimp are pink. Or in a sauce pan on the stove.
Tortillas : Heat in a covered dish in over at 350 for 10 – 15 minutes
To serve. Line heated tortilla with crème, slaw. Top with shrimp, tomato and cilantro. Drizzle with lime juice.

This would be great to make on cooking day. Have it all prepared to serve the next day. Because on cooking day, you go out to eat!
