1/3 cup old-fashioned oats
3 tablespoons fat-free milk
3 tablespoons reduced-fat plain yogurt
1 tablespoon honey
1/2 cup assorted fresh fruit
2 tablespoons chopped walnuts, toasted

In a small container or Mason jar, combine oats, milk, yogurt, and honey. Top with fruit and nuts. Store in the refrigerator overnight.

Variations:
Chocolate-Cherry Oats: Use cherry-flavored yogurt, add 1 tablespoon cocoa powder, and top with fresh or frozen pitted cherries.

Banana Bread Oats: Replace honey with maple syrup and stir in 1/2 a mashed banana, and 1/2 teaspoon cinnamon. Top with toasted pecans.

Pina Colada Oats: Add 1/2 a mashed banana, 2 tablespoons crushed pineapple, and 1 tablespoon shredded coconut to the oat mixture.

Make this dairy-free by using 1/2 cup soy or coconut milk instead of milk and yogurt.

This can be prepared several days in advance.

To toast nuts, bake in a shallow pan in a 350-degree oven for 5-10 minutes, or cook in a skillet over low heat until lightly browned, stirring constantly.

1 serving: 345 calories, 13g fat (2g saturated fat), 4 mg cholesterol, 53mg sodium, 53g carbohydrate (31g sugars, 5g fiber), 10g protein
