1 package Jimmy dean sausage
10 eggs, lightly beaten
3 cups milk
2 tsps. dry mustard
6 cups cubed vread
1/2 tsp. pepper
2 cups shredded sharp cheddar cheese
1/2 cup mushrooms(optional)
1 medium tomato, seeded and chopped(optional)
1/2 cup thin sliced green onions(optional)

Heat oven to 325. In large skillet, cook sausage over medium heat, until thoroughly cooked and no longer pink.In a large mixing bowl, combine eggs, milk, mustard, salt and pepper, stirring well. Dirtribute 1/2 the bread evenly in a buttered 13x9 pan. Sprinkle with 1/2 the cheese, sausage and optional ingredients.Repaet layering using remaining bread, cheese, and optional ingredients.Pour the egg mixture over the casserole.Bake uncovered for 55-60 minutes or until eggs are set. Tent with foil if top begins to brown too quickly.
