Jam Thumbprint Cookies Recipe

2 c almond flour
¼ c coconut flour
½ c granulated sugar
1 tsp baking powder
1/8 tsp salt
7 tbsp coconut oil, melted and cooled slightly
1 large egg
1 tsp almond extract
1/3 cup jam of any flavor
½ cup white chocolate for piping, optional

Directions:

Mix together almond flour, coconut flour, sugar, baking powder and salt.
An another bowl, stir together the coconut oil, egg and almond extract
Add the flour mixture to he wet mixture and stir until just combined.
The dough will feel wet, let it stand for 10 minutes so the flour can absorb the liquid.
Preheat oven to 350º. Line cookie sheet with parchment paper.
Roll he dough into 1" balls and place on cookie sheet.
Use your thumb to make an imprint in the middle of each cookie. Pat the sides together if they split while doing this.
Fell each indentation with 1/2 tsp of jam. Don't overfill or it will run out.
Bake for 8 minutes. Cool and remove from baking sheet after 5 minutes.

Pipe with white chocolate if you want.
Refrigerate for up to four days.
