2 cups matzah farfel
3 eggs, separated
½ cup sugar
¼ cup sweet red wine
2 tbsp grated orange rind
2 tbsp oil
½ tsp cinnamon
½ tsp salt
2 cups thinly sliced apples
2 tbsp lemon juice
⅛ cup slivered almonds

Directions:
Directions:
1. Preheat oven to 350º. Place cold farfel and cold water to cover in a bowl; let stand 5 minutes. Drain well and mash.

2. In a large mixing bowl, beat egg yolks and sugar until thick. Add farfel, wine, orange rind, oil, and cinnamon; mix well.

3. In another bowl, beat egg whites and salt until stiff but not dry. Carefully fold egg whites into farfel mixture. Pour half the farfel mixture into a greased 1½-qt baking dish.

4. Arrange apples over batter and sprinkle with lemon juice. Cover apples with remaining batter. Sprinkle the almonds all over.

5. Bake 30 minutes until lightly browned and set.
