1 large eggplant
4 tbsp margarine or butter
1 small onion, chopped
1 small green pepper, chopped
salt and pepper to taste
2 small eggs, slightly beaten
¾ cup matzah meal
⅓ cup margarine/butter melted
paprika

Directions:
Directions:
1. Preheat oven to 350º.

2. Peel eggplant and slice it. Cook it in simmering water to cover until it's tender (20 minutes).

3. Drain and mash.

4. Sauté the onion and pepper pieces in margarine until tender but not crisp.

5. Mix eggplant with slightly beaten eggs.

6. Add salt and pepper to taste.

7. Add onions and pepper pieces to eggplant mixture.

8. Blend in enough matzah meal to give the mixture a good consistency and then place in casserole.

9. Pour melted margarine/butter over the kugel, sprinkle with paprika, and bake for 45 minutes.
