½ cup roughly chopped parsley leaves and stems
2 teaspoons lemon zest (from 1 lemon)
20 oz grape or cherry tomatoes
¼ cup olive oil, plus 2 tablespoons olive oil
1 tablespoon fresh thyme
salt and pepper
1 yellow onion, thinly sliced
3 large garlic cloves, thinly sliced
½ teaspoon red-pepper flakes
2 (15-ounce) cans butter or cannellini beans, rinsed
1½ cups vegetable broth, chicken broth, or water
freshly grated Parmesan cheese (optional)

Step 1:
Heat oven to 425º. In a small bowl, toss together parsley and lemon zest until well combined. Set aside until Step 4.

Step 2:
In a large baking dish, toss the tomatoes with ¼ cup olive oil and the thyme, then season generously with salt and pepper. Roast tomatoes in the preheated oven for 25 minutes, or until they have collapsed and are turning golden around the edges. While tomatoes are roasting, start on Step 3.

Step 3:
Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the onion, garlic, and red-pepper flakes, and cook for 5 minutes, until the onion is softened. Stir in the beans and broth/water and bring to a simmer.

Step 4:
Add the roasted tomatoes. In order to thicken the stew, crush some of the beans and tomatoes. Simmer for 10-15 minutes to improve flavors.

Step 4:
Add the roasted tomatoes to the stew, and season with salt and pepper.
