Ingredients: 3 Tbls Olive Oil 1 x brown onion finely chopped 3 - 4 cloves garlic finely chopped 2 x green chillies 1/4 scotch bonnet 1 x tsp ground coriander 1 x tsp ground cumin 1 x tsp of ground ginger 3/4 tsp of Turmeric Salt, black pepper and aromat to taste (*) 1 x 400g tinned tomatoes (chopped or whole plum) 1 x 800g tinned leaf spinach 6 cherry tomatoes freshly chopped coriander

Directions:1. Heat oil in a heavy wok or Karahi 2. Add onion and garlic and fry on low heat until mixture takes on colour 3. add cumin, ginger and turmeric and allow to sautee for about 5 mins 4. add tinned tomatoes and cook for about 15 mins on low. 5. add spinach and chopped fresh tomatoes along with (*) seasonings and allow to cook so that spinach absorbs flavours of spices (about 20 mins) 6. add chopped coriander, stir and cook for a further 5 mins. |
