3 matzahs
1 tsp salt
2 tbsp melted chicken fat shortening or oil
3 eggs, separated
1 cup sugar
1 cup chopped apples
½ cup chopped walnuts
¼ tsp ground cinnamon

Directions:
Directions:
1. Soak matzah in water to cover until they are soft. Squeeze out excess liquid. Stir until creamy.

2. Add salt and melted fat.

3. Beat egg yolks with sugar. Blend into matzah mixture.

4. Fold in stiffly beaten egg whites.

5. Alternate the batter with apples and nuts in a greased 2-quart dish, starting and ending with batter. Sprinkle with some matzah meal and cinnamon.

6. Bake in preheated oven at 350º for 30 minutes or until lightly browned. Serve with fruit or wine sauces or topped with berries.
