3 Tbsp unsweetened cocoa powder
2 c sugar
½ c milk
½ c butter
3 c oats
½ c peanut butter
1 tsp vanilla

Directions:
In a medium saucepan, bring the cocoa, sugar, milk, and butter to a boil over medium heat. It's important to bring these to a boil verrrry slowly. Once they reach a rolling boil, boil for 60 seconds. Use a timer. Pull the saucepan off the heat after boiling. Add in the oats, peanut butter, and vanilla. Mix well. Allow the mixture to cool for 1 minute and then drop by teaspoonfuls onto wax paper. Once cookies are placed on wax paper, allow them to cool until hardened. Enjoy.

Stick to real butter for this recipe and do not use margarine, otherwise it will leave the cookies tasting strange. Do not make these cookies when it is raining. I know this sounds weird, but the pressure in the atmosphere prevents the cookies from setting properly. You can also lessen the sugar by up to half if you don't want it to be too sweet. You can also substitute almond extract for vanilla for something different. Adding shredded coconut is also fun.
