5 Cups Peeled, Pitted and Chopped Fresh Peaches (food processor is helpful)
¼ Cup Fresh Squeezed Lemon Juice
9 Cups Sugar
1½ tsp Ground Cinnamon
2 Vanilla Beans (at least 3 inches long)
1 Pouch/3 oz. liquid fruit pectin

In a large, heavy stock pot, combine peaches and lemon juice. Stir in sugar and cinnamon until well blended. Split vanilla beans and scrape seeds into peach mixture. Add vanilla bean pods. Stirring constantly, cook over low heat 4 minutes then increase heat to high and bring mixture to a rolling boil (still stirring constantly). Stir in pectin. Bring to a boil again and boil 1 minute, stirring constantly. Remove from heat, skim off foam. Remove vanilla bean pods. Spoon jam into jars with lids. Store in fridge or process using favorite method.
