⅓ Cup Olive Oil (or favorite oil or butter)
⅔ Cup Milk
1½ Cup Tapioca Flour
1 tsp. Salt
1-2 Cups Grated Cheese, packed (any type)

Preheat oven to 400º.

Spray 16-18 mini muffin pan or 6-8 regular muffin pan with non-stick spray. Blend all ingredients in a blender. Mix well, scraping sides down with spatula if necessary. Pour batter into muffin tins, filling to top but not over. Bake mini-muffins 18-20 minutes. Regular size take 22-25 minutes. They will puff up and turn golden brown. Take out of oven and remove from tins. Serve hot.
