1 large or 2 small Zucchini (peeled, seeded and grated)
2 or 3 Eggs
2 or 3 T Bacon bits
Parsley (chopped)
Garlic salt or fresh garlic
S & P
1 T Baking powder
Flour
Directions:
Directions:
Beat eggs until frothy, add grated zucchini, bacon bits, baking powder, parsley and spices. Add just enough flour to egg mixture to make it thick enough to drop by teaspoons in hot oil. Fry in hot oil until brown on both sides.

Great with spaghetti or other Italian foods.
