1 lb confectioners sugar
4-oz cream cheese softened
¼ tsp peppermint extract
6 ounces semisweet chocolate chips

Mix cream cheese, sugar, and peppermint extract until well mixed. Adjust the amount of powdered sugar as needed - it should be sticky, but hold together. Roll dough into teaspoon-sized balls and place on baking paper or parchment. Create a small indent with a teaspoon or your finger. Cover with plastic wrap and let stand for a few hours.
When peppermints have firmed, melt chocolate - in the microwave is fine. Fill a piping bag or freezer bag with corner cut out with melted chocolate. Fill each mini peppermint bowl with chocolate and let cool. Refrigerate in an airtight container until ready to serve.

If working solo, make only a few balls at a time before making indentations. A helper makes the perfect peppermint maker. Be sure to keep the main peppermint mixture lightly covered with a damp paper towel while making balls to prevent drying and cracking.
