1 lemon
zest from 1 lemon
4 tbsp. mayo
4 tsp. honey
4 tsp. Dijon mustard
1 tbsp. fry seasoning*
1 c. panko breadcrumbs
4 tbsp. sour cream
8 pork cutlets
vegetable oil for frying

Directions:
Directions:
In a small bowl, combine mayo, honey, and mustard. Set aside. Place panko, lemon zest, and fry seasoning in a gallon sized zip top bag. Place sour cream in a bowl. Dip pork in sour cream, and turn to coat, then place in bag with panko and shake until evenly coated, press to adhere if needed. Heat ¼ inch of oil in a large nonstick pan over med/high heat. Add pork and cook until panko is golden, 2-3 minutes per side. Drain on paper towels. Serve pork with mustard sauce, and lemon wedges.
