1 shallot, finely chopped
1 tsp. rosemary, chopped
1½ lbs. pork tenderloin
2 tbsp. fig jam
1 tbsp. chicken stock concentrate*
3 tbsp. balsamic vinegar
2 tbsp. butter

Directions:
Directions:
Preheat oven to 450º and adjust rack to upper position. Heat a drizzle of olive oil in a large pan over medium heat. Season pork all over with salt and pepper. Add to pan and sear, turning occasionally, until browned all over, 4-8 minutes. Transfer to baking sheet and roast in oven for 10-20 minutes or until done. Let rest. In same pan used to sear pork, heat a drizzle of oil, add shallots, and 1 tsp. rosemary. Cook until shallot is softened. Add fig jam, stock concentrate, ½ c. water, and vinegar. Stir to combine, and simmer until thick and saucy, 2-3 minutes. Remove from heat and add butter, stir until melted. Slice pork, and serve with fig sauce.
