1 8 oz. round brie cheese
1 14 oz. can artichoke hearts, drained and chopped
4 slices bacon, crisp cooked, drained and crumpled
1 10 inch square or round Italian flat bread (focaccia), about 2 inches thick, split and toasted
Fresh rosemary (optional)
Red grape tomatoes (optional)

Directions:
Preheat oven to 400 degrees. Trim and discard rind of cheese, cut cheese into large pieces. Place in a medium microwave safe bowl or 1 qt. casserole. Microcook on high for 30 - 45 seconds or until cheese begins to melt. Stir in artichokes and bacon. Microcook cheese mixture on high power for 1 to 1 1/2 minutes or until heated through, stirring once or twice. Spread mixture on focaccia bottom. Place focaccia top over mixture. Place on baking sheet. Bake, uncovered, 8 - 10
minutes or until heated through. Cut into 4 X 1 inch strips or wedges. Garnish with rosemary and tomatoes. Makes 12 appetizer servings.
