4 medium zucchini, cut in half lengthwise
1 tablespoon olive oil
1 lb sausage: breakfast, Italian, or hamburger
1 clove garlic, minced
1 small onion, chopped
2 medium vine-ripened tomatoes, chopped
1 C other veges: peppers, carrots, etc, as on hand (opt)
Kosher salt and freshly ground black pepper
1/2 cup Parmesan, finely grated
1/2 cup mozzarella, shaved
I used part Mozz part cheddar, other cheese mixture
1/4 cup breadcrumbs or part panko crumbs
2 tablespoons chopped fresh parsley

1. Preheat the oven to 400 degrees F.
2. With a teaspoon, scoop out the flesh from the interior of the zucchini, so they resemble boats. Place the zucchini boats in a 9-by-13-inch casserole dish.
3. Bake the zucchini in preheated oven while cooking the rest.
4. Chop the zucchini flesh, peppers, tomatoes, and other veges and set aside.
5. In a medium saute pan over medium-high heat, add the olive oil and let heat through. Add the sausage, and cook for 4 minutes. Add the garlic, onion, chopped zucchini flesh, tomatoes, veges and some salt and pepper. Cook until softened, about 4 minutes.
6. If much liquid, drain, reserve
7. In a medium bowl, place sausage, veges, add the 2/3 of cheese, breadcrumbs and parsley; mix to combine.
8. Take zucchini out of oven. Spoon in and mound the sausage mixture into the zucchini boats.
9. Sprinkle the reserved cheeses mixture over top. Place in oven and bake until golden on top, 20 minutes.
