1 yellow onion, sliced
1 Anaheim pepper, seeded and sliced
4 tbsp. ketchup
2 tsp. Cholula hot sauce
1 tbsp. smoky BBQ seasoning
1¼ lbs. ground beef
1 c. pepper jack cheese
4 brioche hamburger buns
salt and pepper

BBQ seasoning:
1 tsp. garlic powder
½ tsp. onion powder
¼ tsp. black pepper
1 tsp. chili powder
2 tsp. smoked paprika
½ tsp. salt
1 tsp. cumin

Directions:
Directions:
In a small bowl combine ketchup and hot sauce (to taste), set aside. Heat a drizzle of oil in a large pan over med/high heat, add onion and pepper. Cook until brown and softened about 7-9 minutes.
Meanwhile, in a large bowl, combine beef, 1 tbsp. BBQ seasoning, and a large pinch of salt and pepper. Divide beef mixture into fourths. Form patties and grill, adding cheese at the end to melt. Toast buns on grill. Spread ketchup mix on buns. Add patties, top with onions and peppers.
Use the remaining BBQ seasoning to sprinkle on homemade fries or save it for later!
