3-4 medium or large over ripe bananas
2 tbsp. brown sugar
1½ tsp. vanilla extract
¾ tsp. cinnamon
½ c. butter, softened
1 c. sugar
2 eggs
2 c. flour
1 tsp. baking soda
¼ tsp. salt
2 tbsp. sour cream or Greek yogurt

Crumb Topping:
1 tsp. cinnamon
1 c. flour
1 c. brown sugar
6 tbsp. butter, cold

Directions:
Directions:
Preheat oven to 350º. Grease 2 8x4 pans. In a small bowl, mash bananas, brown sugar, vanilla, and cinnamon together. In a large bowl, cream butter and sugar together until light and fluffy. Add in eggs and beat until mixed. Sift flour, baking soda, and salt into egg mixture. Stir until combined, add sour cream and stir. Pour in bananas and mix until combined, pour into greased pans.

Crumb Topping:
Combine cinnamon, flour, and brown sugar, cut in cold butter with pastry cutter until it looks like coarse crumbs. Sprinkle over both pans. Bake 35-40 minutes or until toothpick comes out clean. Allow to cool 10 minutes, turn out, and finish cooling on cooling racks.
