2½ tbsp. quick-cooking tapioca
⅛ tsp. salt
6 drops red food coloring
3 c. drained, water packed red sour cherries
Pastry for 9 inch, 2 crust pie
1 c. sugar
½ c. cherry juice
¼ tsp. almond extract
1 tbsp. butter, cubed

Directions:
Directions:
Combine all ingredients except crust and butter, let stand for 15 minutes. Pour into pie shells, dot the filling with butter. Cut air vents in top crust and place over filing. Press and crimp crust edges together. Bake at 450º for 50 minutes.
