Crust:
2 c. flour
½ c. sugar
¼ tsp. salt
2 sticks (1 c.) salted butter, cut into small cubes

Filling:
1½ c. sugar
¼ c. flour
4 large eggs
zest and juice from 4 medium sized lemons
powdered sugar

Directions:
Directions:
Crust: Preheat oven to 350º. Grease a 9x13 pan with butter. Stir together flour, sugar, and salt. Cut in butter with a pastry cutter until it resembles fine crumbs. Press into the prepared pan and bake about 20 minutes, until brown around the edges.
Filling: Stir together the sugar and flour. Add eggs and whisk to combine. Add the lemon zest and juice, mix until combined. Pour over crust and bake for about 20 minutes. Allow to cool in fridge for a minimum of 2 hours, then sift powdered sugar all over top before cutting into squares. Store in fridge.
